Mexican Night

We love Mexican food in our family, really authentic real Mexican food. Nothing better then street tacos in Mexico! But I also love texmex, generally, I just love food. Most food. But at home we have made up the recipe below and we make it quite often, the kids love it and we love it. I’m not sure what to call it, it’s not texmex, well sort of, but it’s not authentic Mexican either but it’s still Mexican. Oh well, you make it and make up a name for it, for now we just call it Mexican as it falls under the umbrella term. Make sure to add some hot sauce on your burrito as the filling is mild, very flavourful but mild. Again, all recipes posted here are with the kids in mind. You will see at the base of the recipe that I make Fajitas for the kids, it all comes down to the same thing, cutting the veggie filling very small and the kids eat it. Have fun cooking!

Re-fried Black Beans:

1 Can Black beans (save abut 1/4 cup of beans for the vegetable filling)

400ml Salsa

Method:

Place in a pot and simmer stir occasionally. After about 30min of simmering, pure with a hand held mixer and serve. 

Rice:

1 Cup uncooked Brown Rice (Follow cooking instructions on your package)

Guacamole:

2 Avocados

1 Garlic Clove

Salt and Black Pepper to taste

Method:

Mince the garlic and add it together with the 2 avocados into a food processor, mix for a really smooth guacamole. For a chunkier kids, simply mix avocados with the garlic with a fork. Add salt and pepper to taste.

Vegetable Filling:

2 small yellow onions or 1 large yellow onion

1/4 Cup Black beans (saved from the can used to make re-fried beans)

1 Cup Mushrooms

1 Zucchini

1 Cup Mushrooms

3/4 of a Yellow Pepper (around 1 Cup)

1/2 Cup Corn

2 Garlic Cloves

1.5 Tbsp Paprika

1/2 Tsp Onion Powder

1/4 Tsp Chili Powder

Salt and Black pepper to taste

Method:

Chop all the onions, mushrooms, pepper and zucchini into small pieces. Mince the garlic. Saute the onions on medium heat for about 5 min minutes, then add the mushrooms, zucchini, garlic, paprika, chili powder and onion powder. Cook on medium for 10 min, stirring often enough so nothing burns. Add some salt and pepper while you cook this. Add the beans, corn and  yellow pepper. Cook for another 5-10 min, make sure the vegetables are fully cooked and soft.

Final Touches:

Tortillas (I used multigrain)

Salsa

Cheddar cheese

Method:

To make a Fajita for the kids; chop the filling very very small and place it on one side of the tortilla, cover the filling with cheddar cheese. Cook in a frying pan, see image. Cut into wedges and serve with rice, re-fried beans, salsa and guacamole. (My kid is allergic to avocados so he never gets the guacamole)

To make the Burritos; fill a tortilla with some  vegetable filling, rice, re-fried beans, guacamole, salsa and cheese.
